Ingredients
  • 1 Chicken, 1kg.
  • Onions , 1 kg.
  • Olive Oil, 1 cup
  • Salt, 1 tbs salt to taste
  • Cumin, 1/2 t teaspoon
  • Summac, 4-5 tsp
  • Mixed Spices , a pinch
  • Taboun Bread, 2-4 loafs, depending on size

 

 

 

Musakhan
Musakhan is a Palestinian dish composed of roasted chicken baked with onions, sumac, allspice, saffron, and fried pine nuts served over taboon bread.
The dish is simple to make and the ingredients needed are easily obtainable, which may account for the dish's popularity. Many of the ingredients used: olive oil, sumac and pine nuts are frequently found in Palestinian cuisine.
Musakhan is a dish that one typically eats with one's hands. It is usually presented with the chicken on top of the bread, and could be served with soup. The term 'musakhan' literally means "something that is heated.

Al Musakhan
(Traditional Palestinian chicken dish)

 

 

1. Boil chicken with an onion and spices as usual removing grease as usual until done.
2. Cut onions into small dices and fry in oil adding cumin and salt, until the onion turns golden,
3. Add some of the chicken broth and some sumac.
4. Put the chicken in the pot with the diced onions and oil to absorb the taste and the reddish colour of the onions and sumac.
5. Spread the onion and oil from the chicken pot on the individual bread loafs.
6. Grill the bread loafs in the oven slightly.
7. Cover the bread loafs with the remaining oil and onions as well as the chicken either in whole or in quarter pieces.
8. Place in oven for a while to give it a final grill.
