Ingredients
  • 1/2 kg of Spaghetti
  • 1/2 kg of Melanzane (eggplant)
  • 1 kg can of chopped peeled tomatoes
  • 1/4 cup vegetable oil
  •  2 cloves of Garlic
  •  A little hot pepper (peperoncino)
  •  Salt & Black Pepper

The Eggplant
The nightshade Solanum melongena, also known as the aubergine, brinjal eggplant, eggplant, melongene, brinjal or guinea squash, is a member of the plant family Solanaceae. The plant bears a fruit of the same name, commonly used in cooking. As a nightshade, it is closely related to the   tomato and potato.

Pasta alle Melanzane
(Pasta with eggplants)


 

  1. Chop the garlic and peperoncino.
  2. Cut eggplant in cubes.
  3. Fry all with some oil until golden in color.
  4. Add the tomatoes with some Basilico (Basil) and let cook for 15 minutes or until the sauce thickens.
  5. Cook the pasta ìal denteî , drain water and mix it in the frying pan with the other ingredients and add Parmigiano.
 


Serve hot
