- 1 kg. Tender Green Broad Beans
- 1/2 cup Olive Oil
- 4-5 Cloves Garlic
- 1 bunch of Green Coriander
- Salt to taste

Foul bil Zeit

- Wash beans and cut into 2-3 cm pieces utilizing inside pods and tender
green skin only.
- Cover bottom of coking pot with olive oil.
- Slice garlic cloves and slightly fry till wilted.
- Add the beans and fry a little with garlic.
- Add water to cover and some salt to taste.
- Bring to boil and let simmer for 15 minutes then add chopped coriander
and let simmer for a further 15 minutes until done.
Alternative recipe: follow steps 1 and 2 above
3. Turn beans in hot oil with 1 tbs. spoon sugar until
a bit soft.
4. Add water to coverbring to boil, cover & let it simmer gently.
5. Keep cover on all
the time while cooking until done, but jerking pot every now and then until
you feel that the contents of the closed pot are becoming thick, signaling
the completion of cooking. Lid may now be opened.
6. In the meanwhile mash 4-5 cloves of garlic together with very
finely chopped coriander.
7. Add this mix to the contents of the pot and turn briskly
without mashing the beans. |
