Ingredients
  •  2 cups  Lentils
  •  1 cup Rice
  •  2 large Onions
  •  Salt, Black Pepper, Allspice
  •  Vinegar
  •  2-4 cloves Garlic
  •  2 large salad Tomatoes
  •  2-3 Spring Onions
  •  Parsley

 

 

Lentils
Cooked lentils are popular all over the Middle East and form the basis of many dishes. Mujaddara is a popular dish throughout the Arab world, and is generally made using brown or green lentils and rice, that can be seasoned with cumin, coriander, or mint. It is topped with fried onions and is generally served with yogurt, among other vegetables and side dishes, either hot or cold.
When made with brown lentils and rice, it is known as mudardara in Lebanon; imjadra there generally refers to a dish made with green (and sometimes brown) lentils and bulgur; it is also topped with fried onions, melted butter, and served with yogurt.

Mujaddarah
(Lentils with rice )

 

 

  1. Wash lentils and soak them for one hour then let them boil in water until almost done.
  2. Pour out the boiling water into a container for later use.
  3. Chop and fry onions until brown. Add 1/4 the quantity of fried onions to the lentils together with salt, black pepper and allspice to taste and turn for 5 minutes.
  4. Wash rice and mix well with  the lentils.
  5. Barely cover the lentils / rice mixture with the boiling lentils water,  and slowly simmer for 20 minutes, until the rice to cook.
  6. Serve hot in a platter covering the mixture with the rest of the fried onions.
Mujaddarah goes really well with either of the two suggestions : 1) Crush Garlic and add vinegar, salt and hot pepper. Mix well and use as a sauce. Or (2) Make a salad with 2 tomatoes, 1 cucumber, 1 small chopped onion, one large green pepper, some parsley, and season with  salt, lemon or vinegar and, if desired, a crushed clove of garlic
