- 2 chicken cut in small pieces
- 3 glasses Rice
- 3 small tomato cans (Pelato)

Al Kabsa
Al Kabsa is a family of rice dishes that are served mostly in Saudi Arabia — where it is commonly regarded as a national dish — and the other Arab states of the Gulf. Kabsa, though, is believed to be indigenous to Yemen. In places like Qatar, the United Arab Emirates, Bahrain and Kuwait the dish is popularly known as machboos but is served mostly in the same way.

(Traditional Saudi/ Gulf lamb and rice dish) |

- Boil chicken with black pepper & spices until done, and
lift from stock. Take some stock and add to it one of the finely chopped
onion & chili peppers.
- Add contents of one can of tomatoes, the lime juice, and
1 tbs. of tomato paste and some cardamom.
- Let the mix cook until homogeneous.
- Wash rice and add it to the mix and add stock slowly as needed
to cook the rice. Cook until rice is done, stirring while cooking.
- Grill chicken until golden.
- Pour mix in serving dish.
- Fry nuts & raisins separately and decorate mix.
- Prepare the sauce, and serve separately at room temperature.
- Blend the rest of the ingredients using a food processor
if available ( 2 cans tomatoes, 2 onions, garlic, chili peppers ).
